Overview of thesis

This research aims to evaluate the vascular–metabolic health benefits and environmental sustainability of Australian seaweed consumption. The study will identify and characterize bioactive compounds in edible seaweed species from red, brown, and green algae using LC-MS-based metabolomics analysis. Selected species with high concentrations of bioactive compounds will be further investigated in a mouse model to assess their metabolic effects. The expected outcome is to identify seaweed-derived compounds that may help prevent or manage metabolic disorders such as cardiovascular disease while highlighting seaweed as a sustainable food source with potential environmental benefits.
