Lauren is a Post-Doctoral Research Fellow in the School of Medical and Health Sciences. Her research aims to develop better evidence for the vascular and metabolic health benefits of vegetables and their constituents as well as finding ways to increase vegetable consumption at a population level to improve healthy metabolic and vascular ageing.

Background

Dr Lauren Blekkenhorst obtained her PhD from The University of Western Australia in July 2018. Lauren’s PhD explored the cardiovascular health benefits of vegetables and their constituents, focusing particular attention on nitrate. Dr Blekkenhorst is a Registered Nutritionist with the Nutrition Society of Australia (NSA) and is currently the Secretary for the NSA Perth Group. She has expertise in designing and conducting randomised controlled trials and observational studies that focus on the vascular health benefits of vegetables and their bioactive components. Lauren’s research has been published in leading nutrition journals, such as American Journal of Clinical Nutrition, Molecular Nutrition & Food Research, Clinical Nutrition, and European Journal of Nutrition. Her research has involved regular media engagement, including coverage on Australian television and radio, newspaper, health magazines and web-based media sites.
